Caviar. Make Yourself

Caviar is one of the most delicious and expensive delicacies. Learn the basics of molecular cuisine and make caviar with orange and gum flavors.

First, we will look at the methods of natural caviar production, learn about fish farms and think how we can replace caviar. Next, we’ll find out how molecular cooking appeared, and what dishes we can “cook” at a chemical laboratory. We will learn how to make caviar with different flavors and what equipment is needed for this. In the practical part, we will make caviar with orange and chewing gum flavors. We won't be able to taste the caviar as there’s a “no food” rule in the laboratory, but we will definitely make experiments with aromas.

Children younger than the specified age are allowed on the program only when accompanied by an adult with a paid ticket.

When returning ticket online less than two hours before the visit time specified in it, 50% of its full cost is to be refunded. After the beginning of the session, refund is not possible.

Nikita graduated from Moscow Timiryazev Agricultural Academy. In 2014, he represented Russia as part of a team at the Science Festival in Warsaw. Nikita is a young scientist with lots of energy and vast encyclopedic knowledge, who loves to tell others about science.

Elvira Dorofeeva
Genetic scientist, food technologist.

Graduated with honours from the Faculty of Technology of the Russian State Agrarian University — Moscow Timiryazev Agricultural Academy. Research areas: “Processes and Machinery of Processing Industry of Agricultural Products” and “Agronomy”. Elvira worked in the area of food products examination. Experience with children since 2016: conducting biology and genetics classes, as well as project implementation.

Pavel Chipkin

Graduated from the Faculty of Science of the RUDN University, research area "Fundamental and Applied Chemistry". Area of scientific interests: nanochemistry, chemistry of composite materials, graphene chemistry. Pavel is convinced that chemistry is one of the most beautiful and comprehensive sciences.
