Flowering Rush

(Butomus Umbellatus)

The old Russian name for the plant is “bread-flower”. The rhizomes of the rush can be eaten steamed and baked. The Yakut people made flour and baked bread out of it until they became acquainted with Russian white bread. The starch-rich rhizomes of the flowering rush were their main source of carbohydrates.
