Ample Butterbur

In Russia, the Butterbur is found on the Kuril Islands and Sakhalin. The local population of the Far East calls it “burdock”. Butterbur has the largest leaves among all plants in the Asteraceae family. In Japan, butterbur is grown as vegetable. The young flower heads are boiled or fried and its leaves are used for sushi., Butterbur can be found under the name “Fuki” or “Bog rhubarb” on menus at Russian restaurants.
